What can I do to ensure that all my weight I gain back won't just go to my stomach/midsection? That is my biggest fear.

Comments first, the weight first, the weight you gain may actually settle around your middle, but in time (a few months) it should distribute more evenly. The reason this happens is because after your body has been starved, and you begin to eat again, your body will grasp the weight in your mid-section as a way to protect your organs, which may have been vulnerable during the time you were starving yourself. It's a survival instinct type of response, but it will settle over time. Good luck in your recovery!
